Curries are at the heart of Indian cooking, although they pop up in global cuisine as well, including Thai, Caribbean, Malaysian and Japanese. A curry is what I most often make for dinner at my home, with a side of rice, and this creamy and coconutty one-pot Vegetable Curry, which comes together in minutes, is a top weeknight favorite.
