Mojo de Ajo
Mojo de Ajo is a Mexican garlic-olive-oil infusion you can use for roasted veggies or sautes...or drizzle on a hunky chunk of bread!
4 bulbs garlic (peeled)
2 cups olive oil
1/2 cup lime juice
1 tsp salt
Fill in some text
Place the garlic and EVOO in an oven-safe baking dish.
Bake in preheated 325 degree oven for 45 minutes.
Add lime juice and salt.
Return to oven for 20 minutes.
Once cool, mash with fork. Place in airtight jar and refrigerate.
