Delicious vegan Raspberry White Chocolate Waffles that are also whole wheat. The chocolate and raspberries add little pockets of sweetness.

  1. In a large bowl, add the flour, baking soda, baking powder, chocolate chips and salt and whisk.
  2. In another bowl, mix the nondairy milk, vinegar, flax eggs, raspberries and applesauce and whisk.
  3. Add the wet ingredients to the dry ingredients and mix until just incorporated. Do not overmix.
  4. Preheat your waffle maker (I love this Cuisinart model -- it makes the perfect-size waffles)
  5. Spray the waffle plates with a nonstick spray. Place 1/2 cup of the batter in the center of the waffle-maker. Close and cook until the green indicator light goes on.
  6. Serve hot with fresh fruit and maple syrup.
