Preheat an oven to 450 degrees (I use my little toaster oven)
Cut the potatoes into french fries, as evenly as you possibly can.
Place the fries in a pot with enough water to immerse the fries completely.
Bring the water to a boil and turn off after two minutes.
Immediately drain the potatoes and place them on a kitchen towel to soak out any moisture in them.
Spray an oven-safe baking dish lightly with oil. Place the potatoes on the dish in a single layer, taking care not to overlap them.
Spray on another light coat of oil. Place in the oven and bake 20 minutes, flipping over once halfway through the baking. Since individual ovens can be temperamental, start checking your fries about 10 minutes into the cooking so they don't burn.
Season the fries lightly with salt as soon as they come out of the oven. Eat, and-- if possible-- share.
