Almond Bars With A Citrusy Glaze

  • For the bottom crust:
  • 1 1/2 cups unbleached all-purpose flour
  • 1/3 rd cup light brown sugar (can substitute with regular sugar + 1/2 tsp molasses)
  • 1/2 cup of canola or other flavorless vegetable oil
  • 1/4 tsp salt
  • For the topping:
  • 3 tsp EnerG egg replacer + 5 tbsp warm water , whisked together until mixed
  • 3/4 cup light brown sugar (can use regular sugar + 1 tsp molasses)
  • 1 tsp vanilla extract
  • 1 cup almonds , chopped
  • 1/4 cup unbleached all-purpose flour
  • For the glaze:
  • 1 cup powdered or confectioners' sugar
  • 1 tbsp vegan butter or margarine , melted
  • Juice of 2 limes
  • Zest of 2 limes
  1. Combine the ingredients for the crust with a fork or a pastry blender. Pat evenly into the bottom of a lightly greased 9 X 13-inch pan with oiled fingers.
  2. Bake the crust for 12 minutes in a 350-degree oven until lightly brown and set.
  3. To make the topping, mix all the ingredients in a bowl, then pour over the prepared crust, making sure it coats the crust evenly. Use a spatula or the back of a spoon to smooth it out.
  4. Bake for about 22-25 minutes or until the topping has set.
  5. To make the glaze, mix the ingredients for the glaze into a smooth paste. When the bars are still hot, spread the glaze over the bars or drizzle in a decorative pattern. Allow the bars to cool completely, then cut into bars with a sharp, serrated knife.
