Chickpea Avocado Salad for sandwiches and wraps

A delicious, fresh Chickpea Avocado Salad to stuff into sandwiches and wraps. Green peppers, red onions, and a few herbs and spices add incredible flavor.

  • 1 14-oz can chickpeas (drained)
  • 2 ripe avocados (cut in a dice)
  • 1 medium tomato (seeds removed and diced)
  • ½ green bell pepper (deseeded and cut into a fine dice)
  • 1 clove garlic (finely minced)
  • 1 medium red onion (finely diced)
  • Juice of ½ lemon
  • 2 tablespoon coriander or cilantro (minced)
  • 2 teaspoon roasted cumin (coarsely powdered)
  • ½ to 1 teaspoon cayenne
  • Salt to taste


  • Place all of the ingredients in a large bowl and mix well. Serve at room temperature or cold.
