Vegan Apple Cinnamon Oatmeal

Ingredients

  • 1 cup rolled oats
  • 2 cups water
  • 1 cup vanilla almond milk (or any nondairy milk)
  • 1-2 tablespoon maple syrup
  • ½ teaspoon cinnamon (and more for sprinkling)
  • teaspoon salt
  • 1 large apple (peeled, cored, and cut into a ¼-inch dice)
  • 2 tablespoon walnuts (chopped)

Instructions

  • Place the oats, salt and water in a heavy bottomed saucepan and bring to a boil.
  • Add the chopped apples and half the almond milk. Stir well to mix.
  • When the oatmeal returns to a boil, lower the heat to a simmer, cover with a lid, and let the oatmeal cook, stirring frequently, for about 15 minutes. If the oatmeal gets too dry, add some water or almond milk.
  • When the oatmeal is smooth and very creamy, turn off the heat. Stir in the maple syrup and cinnamon and the remaining almond milk.
  • Ladle out into bowls, sprinkle on some more cinnamon and walnuts, Serve immediately.
