- 1 cup rolled oats
- 2 cups water
- 1 cup vanilla almond milk (or any nondairy milk)
- 1-2 tablespoon maple syrup
- ½ teaspoon cinnamon (and more for sprinkling)
- ⅛ teaspoon salt
- 1 large apple (peeled, cored, and cut into a ¼-inch dice)
- 2 tablespoon walnuts (chopped)
Place the oats, salt and water in a heavy bottomed saucepan and bring to a boil.
Add the chopped apples and half the almond milk. Stir well to mix.
When the oatmeal returns to a boil, lower the heat to a simmer, cover with a lid, and let the oatmeal cook, stirring frequently, for about 15 minutes. If the oatmeal gets too dry, add some water or almond milk.
When the oatmeal is smooth and very creamy, turn off the heat. Stir in the maple syrup and cinnamon and the remaining almond milk.
Ladle out into bowls, sprinkle on some more cinnamon and walnuts, Serve immediately.
