10-minute Vegan Dal with Basic Tomato Onion Sauce
A 10-minute vegan dal that's delicious, nutritious and oh so easy.
Servings: 8 servings
- 1 tsp vegetable oil
- 1 tsp mustard seeds
- 1 ½ cups basic tomato onion sauce
- 2 15-oz cans brown lentils (about 3-4 cups cooked)
- 2 tbsp cilantro (minced)
- Salt to taste
- 2 tbsp grated coconut (optional)
Heat the oil in a saucepan. Add the mustard seeds and, when they sputter, add the cilantro and saute for 30 seconds.
Add the tomato onion sauce and lentils and salt to taste. Let everything come to a boil, turn down the heat and simmer for a couple of minutes, and turn off.
Garnish with grated coconut, if using, and serve hot with wedges of lemon and rice.
