Ragout is a French style, slow-cooked stew of meat and vegetables. Cut out the meat, replace it with flavorful mushrooms, and you have a mushroom ragout that tastes simply delicious.

Ingredients

Mushrooms EVOO Garlic Onions Rosemary + thyme White wine Flour Parsley Vegan butter

1. Saute onions and garlic in EVOO. Add mushrooms and saute.

Instructions

2. Mix in the herbs, wine and flour. Saute until mushrooms have absorbed flour.

3. Add stock or water, bring to a boil and simmer 10 minutes. Season with salt and pepper. Stir in vegan butter and parsley.

4. Serve over pasta or mashed potatoes. Or serve as vegan gravy with your favorite entree.

I love the mushroom ragout with tofu steaks.
