MASALA KHICHDI

Healthy + Ayurvedic + Comforting

Khichdi is the quintessential Indian comfort food--a healthy mix of rice and lentils that may or may not include veggies and spices. This delicious Masala Khichdi has tons of veggies, making it even more worthy of your love. It's also a vegan, gluten-free, soy-free, and nut-free recipe.  You can make this recipe in the Instant Pot or on the stovetop.

INGREDIENTS

- Rice - Mung lentils (moong dal) - Coconut oil - Cumin seeds - Onion - Curry leaves - Ginger - Tomato puree - Mixed veggies (eg. eggplants, sweet potatoes, green beans, bell peppers, green peas, carrots). - Turmeric - Cayenne - Ground coriander - Garam masala - Salt - Cilantro

Soak moong dal for a few minutes before you begin cooking.

INSTRUCTIONS

Saute cumin, curry leaves and onions in an Instant Pot set to saute or in a pressure cooker or saucepan.

Stir in garlic, then pureed tomatoes, and cook until the liquid bubbles at the edges of the pot.

Add coriander powder, turmeric and cayenne or paprika and stir in.

– Add in chopped veggies and mix...

...followed by rice and moong dal

Add six cups water and salt to taste.  The water in the pot should taste saltier than you want the khichdi to be. Set the IP to the "rice" function. If using a pressure cooker let the khichdi cook for three whistles. On the stove, cook 25-30 minutes or until rice and lentils have cooked.

– Turn the saute function on IP or the stove back on. Stir in frozen green peas and garam masala. You can add some more water to the khichdi if you wish to make it a little softer in consistency, but don't make it runny. 

SERVE HOT!!
