Ingredients

Fresh lemons Spaghetti Vegan parmesan Vegan mayo Ground black pepper Extra virgin olive oil Fresh basil Salt

In large bowl, whisk lemon juice, lemon zest, vegan parm, vegan mayo, olive oil, pepper and salt until smooth.

Add cooked spaghetti to the sauce along with ½ cup pasta water. Toss to coat the spaghetti with the sauce, then toss in the torn basil.

Serve with a fresh side salad like chickpea avocado salad or Caesar salad...

...and crusty bread.
