Slow Cooker Vegan Breakfast Casserole

A slow cooker breakfast casserole for a protein-packed start to the day. Just 20 minutes at night to put it together and breakfast is ready the next morning!

Ingredients

Oil Onions Garlic Rosemary Potatoes Parsley Vegan sausage Red pepper flakes Cashews Tofu Onion powder Garlic powder Nutritional yeast Soy sauce

1. Blend soy sauce, nutritional yeast, tofu, cashews, garlic powder, onion powder, rosemary and red pepper flakes with water into a smooth, cheesy sauce.

2. Heat oil in crockpot set to saute or high. Add onions, garlic, rosemary and salt. Saute until onions are translucent. 3. Stir in the grated potatoes and parsley. Add sausage and mix.

4. Pour the cheesy sauce evenly over the potatoes and sausage. Slow-cook the casserole on high for five hours or on low for seven to eight hours.

Serve hot or warm.
