Easy, Authentic Indian CHANA MASALA

Chana masala is a north Indian dish of chickpeas in a spicy, brick-red tomato onion sauce. It's easy to make a restaurant quality version at home.

Ingredients: – 1 tsp vegetable oil – 1 tsp cumin seeds – 1 to 2 black cardamom pods – 1 bay leaf – 1 medium onion (finely chopped) – 1 tbsp ginger garlic paste – 3 cups chickpeas (cooked or canned) – 3 medium tomatoes (pureed) – 1 tbsp coriander powder – 1 tsp cumin powder – 2 tsp paprika – 1 tbsp chana masala powder –2 tbsp  cilantro (finely chopped) – Salt to taste

– Add tomato puree, coriander powder, cumin powder, paprika.  – Stir in tomatoes. – Add chickpeas and  water as needed. – Boil, cover and cook 10 minutes. – Mash some of the chickpeas with the back of the ladle.  – Add chana masala powder and cilantro.

Serve hot with pooris...
