Shaved Brussels Sprouts Salad

A delicious vegan shaved Brussels Sprouts Salad with sweet cranberries, crunchy sunflower seeds and a creamy maple dijon dressing. 


– 1½ pounds Brussels sprouts (very thinly sliced) – 1½ cups dried cranberries – ¾ cup sunflower seeds (roasted and unsalted) For dressing: – ⅔ cup EVOO – ¼ cup dijon mustard – 2 tbsp maple syrup – 2 tbsp apple cider vinegar – Salt and ground black pepper 


Place all dressing ingredients in a blender bowl or in a bowl. Blend or whisk until a smooth, creamy salad dressing forms.

Wash and trim the Brussels sprouts. Slice them thinly using the thinnest slicing blade on your food processor or with a knife. Place in a large bowl.

Add the cranberries and sunflower seeds to the bowl and mix.

Drizzle on the creamy maple dijon dressing and toss the salad to mix all ingredients thoroughly.

Serve at room temperature or slightly cold.
