Vegan Meatball Curry
Made with South Indian flavors this vegan Meatball curry is creamy and delicious with plant-based meatballs, coconut milk, curry leaves and spices.
– Vegan meatballs
– Vegetable oil
– Black mustard seeds
– Curry leaves
– Ginger garlic paste
– Paprika (for color)
– Coriander powder
– Coconut milk (full fat, from a can)
– Salt to taste
Brown the vegan meatballs. Set aside. Blend tomatoes, onions, ginger and garlic. Saute mustard and curry leaves, splosh the sauce in and cook.
Stir in coconut milk, spices, stock, cilantro, add meatballs, and dinner is served!
Serve with cumin rice or brown rice. Or naan.
