Mediterranean-Style Roasted Figs and Potatoes with Thyme

Serve this simple and stunning side dish of Mediterranean-style roasted figs and potatoes in a thyme and lemon bath with any entree of your choice. Oven-roasting concentrates the honey-like sweetness of the figs and the potatoes are crusty and golden.

Ingredients

  • 1½ pounds ripe figs (halved)
  • 1½ pounds baby potatoes (halved or quartered if large, or use regular-sized waxy potatoes like Yukon Gold, cut into 1-inch cubes.)

For dressing/sauce/lemony broth

  • ¼ cup lemon juice (from one large lemon)
  • Zest of one lemon
  • ¼ cup extra virgin olive oil
  • 2 tablespoons maple syrup
  • ½ to 1 teaspoon red pepper flakes (adjust to your preference)
  • 1 tablespoon fresh thyme (stems removed and leaves roughly chopped. You can also leave some thyme sprigs whole for topping the bake, which makes a nice presentation)
  • ½ teaspoon salt

Instructions

Make dressing

  • Whisk together the lemon juice, extra virgin olive oil, maple syrup, red pepper flakes, chopped thyme and salt.

Mix and bake

  • Preheat the oven to 400 degrees Fahrenheit/205 degrees Celsius.
  • Place the figs and potatoes in a baking dish in a single layer. Drizzle the dressing over them and toss to mix evenly. Cover the baking dish tightly with aluminum foil.
  • Strew some whole sprigs of thyme on top of the figs and potatoes after tossing for a nice presentation. The roasted thyme sprigs also taste delicious!
  • Bake in the preheated oven for 1 hour and 15 minutes.
  • If you want the potatoes and figs to brown more, remove the aluminum foil from the baking dish after one hour, then continue baking 15 minutes longer before proceeding to the next step.
  • Remove the aluminum foil from the baking dish, turn on the broiler, and broil for five minutes until the figs look redder and the tops of the potatoes look lightly golden and caramelized.
  • Remove the baking dish from the oven and let it stand 10 minutes before serving.
