Air Fryer Potatoes

These golden, delicious and crispy air fryer potatoes are roasted with turmeric, cayenne and garlic. The six-ingredient recipe takes just five minutes of prep and is ready in 16 minutes!

Ingredients

  • 2 pounds potatoes (yellow potatoes, red potatoes or russet potatoes will all work)
  • ½ to 1 teaspoon cayenne (or paprika or red pepper flakes)
  • ½ teaspoon turmeric
  • 1 teaspoon dried mint (can use sage, rosemary, thyme or oregano)
  • 1 teaspoon garlic powder
  • Salt to taste
  • 2 tablespoon avocado oil or any neutral oil

Instructions

  • Cut potatoes in ½ inch dice. If you want chunkier potatoes, cut them in a 1-inch dice or cut them in wedges. I leave the skin on.
  • Soak the diced potatoes in water to cover by an inch. Let them stand 15 minutes, then drain the potatoes into a colander and rinse them thoroughly. This is an optional step but worth doing for the crispiest potatoes.
  • Pat the potatoes dry. Make sure you remove any visible moisture with kitchen towels. Place the potatoes in a bowl.
  • Season the potatoes. Add the turmeric, cayenne, garlic, mint and olive oil to the bowl with the potatoes. Mix thoroughly with your hands or with a ladle.
  • Air fry the potatoes. Place the potatoes in a single layer in the air fryer basket and air-fry at 400 degrees Fahrenheit/205 degrees Celsius for 16 minutes. Every five minutes remove the air fryer basket and toss the potatoes around to make sure they cook evenly. If you cut the potatoes in a 1-inch dice or in wedges, air fry the potatoes for 18-20 minutes.
  • Serve hot. The potatoes are at their crispiest best when they come out of the oven so eat them as quickly as you possibly can.

Notes

  • You can use pretty much any potato in the air fryer, but you will get slightly different results. I use russet potatoes, which are starchy, yellow potatoes or red potatoes, depending on what I have on hand. Russets yield crispier roasted potatoes, so if it's the crunch you are after, definitely use them. Yellow and red potatoes are creamier and more buttery flavored.
  • These air fryer roasted potatoes can easily be made without oil. Coat the cubed potatoes with the seasonings, place in the air fryer basket and air fry as directed. The oil-free potatoes won't be as crispy but they will taste very good.
