  • 1 pound green beans, trimmed and cut into 3/4th-inch pieces
  • 1/4 cup raw cashews
  • 1/4 cup unsweetened almond milk
  • 1/2 chipotle chili pepper (use canned)
  • 2 tbsp fried onions (I used French's -- any brand, including homemade, is fine)
  • Salt to taste
  1. Bring a large pot of salted water to boil while you prep the green beans. When the water boils, add the green beans, wait six minutes, then drain the beans and reserve.

  2. While the beans cook, place the cashews, almond milk, chipotle pepper, 1 tbsp of fried onions and salt in a blender. Blitz until smooth.

  3. Place the green beans in a bowl and drizzle the chipotle sauce over it. Mix well and garnish with remaining fried onions.  Serve.
