Ingredients

  • 1 pound green beans, trimmed and cut into 3/4th-inch pieces
  • 1/4 cup raw cashews
  • 1/4 cup unsweetened almond milk
  • 1/2 chipotle chili pepper (use canned)
  • 2 tbsp fried onions (I used French's -- any brand, including homemade, is fine)
  • Salt to taste

Instructions

  • Bring a large pot of salted water to boil while you prep the green beans. When the water boils, add the green beans, wait six minutes, then drain the beans and reserve.
  • While the beans cook, place the cashews, almond milk, chipotle pepper, 1 tbsp of fried onions and salt in a blender. Blitz until smooth.
  • Place the green beans in a bowl and drizzle the chipotle sauce over it. Mix well and garnish with remaining fried onions.  Serve.
