Cucumber Juice

Toss mint, cucumbers and lemon juice in a blender to make this easy cucumber juice! It's spicy, salty and tangy and so, so refreshing.

Ingredients

  • 3 medium cucumbers (any veriety, including English cucumbers, will work)
  • 2 tablespoons mint leaves (fresh)
  • Juice of ½ lemon
  • Salt to taste (optional)

Instructions

  • Place the cucumbers, mint, lemon juice and salt, if using, in a blender,

  • Blend until smooth. You can drink as is or strain through a fine mesh filter or cheesecloth.

  • To make the salted rim, place the chaat masala, cayenne or paprika and salt in a shallow dish. Dip the rims of the glasses in a shallow dish with water, then immediately dunk the rims in the dish with the chaat masala mixture so it adheres.

  • Add ice to the glasses and pour the cucumber juice over it.

Notes

  • Drink cucumber juice as soon as you make it, when it's freshest and tastes the best. If you absolutely have to make it beforehand store in the refrigerator right after making it and give it a stir before serving. Store no more than a few hours.
