    Curries

    Curries are at the heart of Indian cooking, although they pop up in global cuisine as well, including Thai, Caribbean, Malaysian and Japanese. This is what I most often make for dinner at my home, with a side of rice, and curries like  Vegetable Curry, Vegan Butter Chicken, Vegan Malai Kofta  and Vegan Tofu Curry are among many favorites.
