Tofu is not a traditional Indian ingredient but I've been using it as a substitute for paneer in my Indian and Indo-Chinese recipes since 2007, beginning with my recipe for vegan palak paneer. Although tofu doesn't have the rich mouth feel of paneer it has a similar texture and look, and its porous quality helps it absorb all those rich, spicy Indian sauces beautifully. Like paneer, tofu is loaded with protein and it also makes a good protein substitute in meat-based dishes.
