Almond Milk: Vegan Basics

Almond Milk
So why, you’re wondering, would I post a recipe for almond milk when you can just pick a carton off the shelf at any supermarket.

Well, here’s why. Making almond milk at home is way, way easier than making a trip to the supermarket. Besides, things made from scratch in your kitchen just taste infinitely more delicious and — big bonus– they’re free of all those additives and preservatives that don’t make much sense, on the carton or in your tummy.

Almond milk is a great substitute for dairy milk in sweets, and if you can’t eat soy for whatever reason, it is a great substitute for soymilk in beverages, including coffee and tea. It’s perfect even as a drink on its own. And for Indian sweets almond milk is a better-than-perfect substitute for milk because it has no cholesterol, is lower in calories, and adds that deliciously nutty flavor that dovetails beautifully with those warm Indian spices like cardamom and nutmeg.

Almond Milk

Ingredients:

1 cup almonds, whole, and water for soaking.

6 cups pure, filtered water

1 tsp agave nectar or maple syrup

1/2 tsp salt (optional)

Soak the almonds overnight or– in a hurry– zap them in the microwave for around 4 minutes.

Place the almonds, filtered water, and other ingredients in a powerful blender and process until the almonds have broken down completely.

You can filter the almond milk or leave it alone. I like the thickness and nuttiness that the almond sludge gives the milk and it’s just amazing in sweets.

I couldn’t make a holiday recipe to share with you pre-Thanksgiving because of ongoing issues with Freddie– he will be 18 in December and his health has not been, let’s just say, rosy. But we’re grateful and happy to have him around for another Thanksgiving.

To make up for the absence of a new recipe, I wanted to share with you recipe ideas from Thanksgivings past.     This is the exact recipe I follow to make my own almond milk. once in a while I drop in few cardamom seeds to give it a flavor. And sometimes a date or two to give it natural sweetness when I am in mood to have healthy sweet. But I never bothered to peel the skins, its just too much work :D

    I loooooove, absolutely love, homemade almond milk, I do it often!lately I’ve been adding a splash of cinnamon and nutmeg on top, delicious!

    Hi :) I love your blog! I’m Indian and vegan too, and I absolutely adore browsing through your recipes – they all look delicious!
    Couple of questions…do you use your Vitamix for this? I bought one recently. Also, about how many grams is 1 cup of almonds? I have a scale, but I don’t have American measuring cups unfortunately.

    Veg Girl, Welcome and thanks for your kind words. I do use a vitamix, and just let it go at the highest setting for about a minute.
    I don’t have a scale myself, but I googled this up and it appears a cup of almonds is 236.6 grams. Hope that helps :)

    Thanks for this amazing recipe. I tried it today and was blown away by the taste! So fresh and nutty and nutritious too I am sure. Much better than what comes out of the carton and no additives….win-win!

    Looks like you read my mind. I just got a bag of almonds from the store to make the same but the sugarless kind.
    The almond milk is very alkaline and hence great for the body. I buy it at Trader Joe’s. I think the milk without the sugar takes some getting used to, but I like it. The home made version was what I was planning on preparing from the book I have been reading.
