These lentil-based soups are light but filling, and they are loaded with veggies and/or grains for a one-two nutritional punch. My favorite when I get the sniffles is the garlic rasam, a south Indian soup with tomatoes for vitamin C and lots of garlic!
Hearty, bean soups
Bean-based soups are perfect when you want a cozy, satisfying meal without working too hard. Be it a Greek fasolada with beans, veggies and rich flavor, or an Italian pasta fagioli with pasta for even more protein and yum, these soups are delicious and then some more.
Creamy, comforting soups
Creamy soups are hands-down my favorite soups to make and eat. My vegan cream of mushroom soup has long been a fan favorite and it's so good, some readers say they've replaced their regular cream of mushroom recipes with this one. I also love the cauliflower soup for its creative use of cauliflower leaves as a garnish.
Light soups
These are the soups you want to eat after a day of heavy eating or when you just want something simple to cleanse the body temple. The miso soup is made with a classic dashi stock but it has tofu for protein and turmeric and ginger for healthy bliss and balance. The bisque offers comforting creaminess but is supremely healthy with wild rice and creamy mushrooms.
Classic American soups
From a Virginia peanut soup, modeled on a delicious soup I once ate in a small, hole-in-the-wall restaurant while passing through Leesburg, Virginia, to a classic New Orleans gumbo made vegan, and a kid-favorite tomato soup, these soups offer a taste of American cuisine.

We have been eating soup for dinner at least twice a week. I cook a huge batch and freeze part of it for those nights we need a quick meal. Crusty bread is always tasty with any type of soup.
Hands down, your Mulligatawny soup is our favorite. You introduced me to curry leaves with that recipe. Now, I throw curry leaves into many of my soups for added complexity and use it as my “secret ingredient.”
